Sprinkle and rub this all-purpose, flavour-enhancing blend into steaks, chops, ribs, chicken, fish or just about anything else you cook on the grill. You can also add and use it to flavour burger and meatloaf mixes, and baked beans. Makes about 3/4 cups.
Three types of chili powder and cayenne pepper anchor this rub. Sprinkle and rub into chicken, fish, prawns, steak and ribs. Can also use it to flavour foods in Mexican or Tex-Mex dishes, such as tacos, quesadillas, fajitas, mole and meat or vegetarian chilies. Makes 2/3 cups.
Use to flavour lamb roasts, grilled, butterflied lamb legs or chops. It can also be used to flavour port chops, barbecue whole chicken or chicken pieces, meat, chicken and seafood kebabs; grilled vegetables and fish, such as salmon. Makes 1/2 cup. Crush the fennel seed by using the bottom of a heavy skillet.
While this is not an Eric Akis rub, I am including the ingredients that are in a commercial preparation. This combination is good for grilled, sauteed, broiled or baked fish, scallops or shrimp.
- Clean seafood well, brush with lemon Grapeseed oil and then rub in (plan on about 1 oz. of finished rub:
- lemon peal
- course ground black pepper
- granulated garlic
- ground coriander
For all rubs, combine all ingredients in a tight-sealing jar. Store away from sunlight and moisture in a cool, room-temperature place.
