Place chicken's gizzards in large saucepan, cover with water, add a bit of salt and simmer over low heat until tender (about 30 min)
Cut the end of Green Banana and make a cut along the outside curves of the Green Bananas skin ( DO NOT REMOVE SKIN), place Green Banana in boiling water and add 2 TBSP of Salt and 2 tsp of Extra Virgin Olive Oil, boil, check every 5 to 10 min (about 20 minutes), Done when you lightly stab it with toothpick and its tender, cool, and peel and cut.
Make Sauce : Mix together in a large saucepan, onion, garlic, white vinegar, corn oil, bay leaves, olives, 1/2 tsp of salt, and water.
Put the Gizzards and Green Bananas with the sauce and bring to a boil.
Simmer for about an hour
Refrigerate for a day. Serve cold or warm
