This recipe makes about 3 dozen cookies if you roll to 1 1/2 inches, the size of the cardboard center of a roll of paper towels.
Mix flour, cocoa powder, espresso and salt into a bowl, set aside.
In a medium mixing bowl cream together butter, sugar and vanilla. Can use an electric mixer with paddle attachment to get it fluffy without all the work!
Gradually mix in the flour mixture.
Divide dough in half or fourths. Roll each into a log.
Wrap logs in parchment and place in freezer until hard. This takes about 30 minutes.
Preheat oven to 350 degF
Unwrap logs and cut cookies to 1/4 inch thick.
Space cookies so they do not touch on parchment lined cookie sheet. These cookies do not spread much.
Bake until firm about 20 to 25 minutes.
Cool cookies before eating.
