In Kitchenaid, mix ? cup warm water and yeast. Let stand till foamy. Add ? cup more water and sponge. Mix using paddle. Add flours, salt and remaining water, mix 1 min. more. Change to dough hook and knead 8-10 minutes. Oil bowl and dough and cover, letting rise till triple in bulk, about 3 hours.
Turn dough onto lightly floured surface and cut in ?. Flatten slightly. Cup hands around sides of dough and move in small circular motions till top is rounded and bottom is smooth. Cover and let rise 45 min.
Put baking sheet in oven and heat to 425?. Put loaves on hot baking sheet and bake 25-30 min. Cool on wire rack.
For an extra crispy exterior place a baking sheet with hot water on a rack below the breads to sort of steam them while they bake.
