A former co-worker, Eve L., used to make the absolute best cheesecakes ever. So good, I could easily turn down any other cheesecake just by reminding myself "it's not Eve's!" Her story was that she obtained the recipe from a restaurant in NY (I know, I didn't think restaurants did that either), but here it is.

Crust:
[Combine 1 stick melted margarine, 2-1/2 cups graham cracker crumbs, and 6 Tablespoons sugar. ] Put in bottom and up sides of springform pan (ungreased). Bake at 350 degrees for 8 minutes. Cool.
Filling:
Place one package [of cream cheese] at a time into food processor [3 packages total]. Add one egg at a time [4 eggs total]. Add other ingredients [1 cup sugar, 1 heaping Tablespoon lemon juice, 1 teaspoon vanilla, and a pinch of salt]. Blend well. When VERY creamy pour mixture into cooled crust. Bake at 350 degrees for 45 minutes on center rack until firm in center when pan is shaken. When done, leave cake in oven and door open a crack until cool.
Topping:
Mix together [1 pint sour cream, 1/4 cup sugar, and 1 teaspoon vanilla]. Spread on cool cake. Bake at 450 degrees for 5 minutes. Cool and refrigerate.
