Grab a large frying pan or wok and put it on a high heat with a little oil in there. When the oil is hot, add the onion and the garlic. When the onion goes translucent add the jalapenos (drain the liquid out of the jar first) and the packet of spices. It should start to smell really good at this point. It should, it's mostly spices. Mmm...
Once the spices are mixed in properly, add the chicken thighs and brown them for a few minutes. Once the chicken has browned, drain the beans and add them. Stir it all up to mix in the spices.
At this point it will be crazy, make-you-cry-like-a-baby hot, so here's where we add the milk. I added it a little at a time because I didn't know how much I was going to need, but you should be able to throw it all in. Add the stock pot at this point too (for anyone who doesn't know, this is a small plastic pot full of highly reduced chicken stock, made by knorr; you could probably substitute a chicken stock cube if needed). Again, stir it all in.
If you want to, you can add some cheese at this point. This will obviously make it nice and cheesy, but it will also take a bit of the heat out without adding too much liquid, in case it's still too hot.
Cook on a medium heat for 20 minutes or so, stirring occasionally, to make sure everything is cooked properly.
Ladle it into bowls, throwing some cheese and a few sliced black olives on the top.
The milk really isn't optional. Even when I'd added what I thought was enough, it was still crazy hot. I could have added fewer jalapenos, but the amount I used gives the right "look", you should be able to see the little green psychopaths in there, grinning at you and daring you to try another bite.
