My boyfriend DESPISES any form of vegetable so it's a mission to ensure he eats right (very much like little kids). I researched different ways to incorporate veg into his diet unknown but nothing worked, finally I decided to tweak the old classic bechamel sauce with something a little different... cheese. Now my boyfriend LOVES his veg and i never have to tell him to stop playing with his food as long as I've got a blob of cheesy bechamel sauce on the plate.
Melt butter over medium-high heat. When butter is completely melted, add flour, salt and pepper and cook until golden brown. Add milk and continue stirring until mixture is thick and bubbly. Remove from heat and add cheese. Serve over pasta, biscuits, steamed vegetables, mashed potatoes or use as an ingredient in other dishes.
Don't leave unattended and stir continuously so as not to burn mixture.
