Preheat oven to 375.
Drain the beans and put in a large ovenproof casserole dish.Add the pancetta, garlic, sage, tomatoes and olive oil. Add enough cold water to cover. Do not add any salt and pepper at this stage.
Cover tightly and bake in oven for 3 1/2 - 4 1/2 hours checking every hour to stir.
After 2 hours add some salt and pepper.
When cooked completely remove from oven , remove garlic cloves and allow to cool before serving.
