This recipe is more about assembling than cooking! For a more reasonable calorie count, use fat-free or reduced fat sour cream, use the guacamole sparingly, and be sure to check the calorie count on the package of tortillas!
1. Prepare the guacomole, cover with plastic wrap and set aside.
2. Saute chicken breast until just done. Pan-fry the flank steak until medium-rare. Cook shrimp until just done. Slice the chicken breast and steak into strips across the grain.
3. Saute onions and bell pepper in olive oil. Sprinkle with fajita seasoning, add sliced steak, sliced chicken and shrimp.
4. Serve with flour tortillas, sour cream, shredded lettuce, chopped tomatoes and guacamole.
