Mix all ingredients except the flour in a food processor until it is mixed but still chunky. Then add the flour and pulse until it is just combined. Put the mixture in the fridge and let it sit for 1 - 2 hours. Then take it out and shape it into patties ( should make 12 small patties which you will serve at least three per pita )
Bake at 375 F for 10 minutes per side or pan fry in 1 tablespoon oil until golden on each side.
Serve in pita with a little hot sauce, hummus ( ground chickpeas with tahini or sesame seed butter ) garlic yogurt sauce and salad.
Garlic yogurt sauce: 1 cup of plain 2% Greek yogurt, 1 clove of garlic, black pepper and lots of salt. Can also add dill or chopped fresh oregano to it.
Tumeric or Yellow Falafel: Add 3/4 teaspoon turmeric to food processor prior to blending
Herb or Green Falafel: Add 1/2 cup additional chopped green parsley, or cilantro, or a mixture ot the two prior to blending.
Sesame Falafel: After forming the patties, dip them in sesame seeds prior to frying. This will make the falafel coating crunchier and give it a slightly nutty flavor.
Remember to make a head of time since the falafel mixture does need to sit in fridge for 1 - 2 hours.
