Great shortcake for the family!
1. Preheat oven to 350ยบ.
2. Prepare cake according to package directions.
3. Grease and flour two (2) 9" cake pans.
4. Pour batter into pans.
5. Bake cakes until toothpick inserted in centers comes out clean (about 25 minutes).
6. Cool completely on wire racks.
7. Reserve 8-10 large strawberries for garnish.
8. Slice remaining strawberries.
9. Place in a medium bowl.
10. Sprinkle with granulated sugar.
11. Mash slightly with potato masher.
12. Chill until ready to assemble cake, at least 30 minutes.
13. Beat whipping cream in a medium bowl with an electric mixer on high speed until stiff peaks form.
14. Add confectioner's sugar and vanilla and continue beating just until mixed.
15. Place one (1) cake layer on serving plate.
16. Cover with mashed strawberries.
17. Top with about 1 1/2 cups whipped cream.
18. Place second layer on top.
19. Spread with remaining whipped cream.
20. Garnish with reserved strawberries.
