Great Breakfast Cookies
Preheat oven to 350*
Cream sugar and butter until fluffy (about 10 minutes)
Beat in eggs one at a time, then vanilla
Mix dry ingredients together
Slowly add dry to creamed mix by hand
Mix in oats, coconut, seeds and fruit
Place on parchment paper in even 1/4c. scoops, mounded
Bake for 7 minutes, turn and put on bottom rack for 7 minutes
Cool on wire rack right away
