2. Season chicken with seasoned salt, pepper, garlic powder, onion powder and hot sauce.
3. Whisk together eggs and buttermilk. Pour over chicken thighs. Cover and let rest in the fridge for at least 1 hour.
4. In a bowl, combine flour, corn starch, sugar, cayenne, paprika, onion powder, garlic powder, salt and pepper.
5. When ready to cook, pour canola/vegetable oil in a large pan and bring to a med-high heat. Dredge chicken in flour mixture until nicely coated. Cook in oil 3-4 minutes per side.
6. Pull out and let rest. Build sandwich with toasted brioche bun, spicy Mayo, pickles, tomato and lettuce.
Bonus: take excess chicken thigh fat, put in a pan at low heat and render the fat down. Strain into the oil for added flavor.
