Suggest a better descriptionIn a fine-mesh sieve, rinse the farro under cold running water and transfer to a saucepan. Add 1 cup (8 fl oz/250 ml) water, place over medium-high heat, bring to a boil, and add 1/2 teaspoon salt. Reduce the heat to medium-low so the farro just simmers, cover partially, and cook until tender yet still slightly firm and chewy, about 20 minutes. Remove from the heat and drain well in the fine-mesh sieve.
In a serving bowl, whisk together the olive oil and lemon juice until well blended. Whisk in salt and pepper to taste. Add the farro and toss well. Gently stir in the tomatoes, cheese, green onion, and basil until all of the ingredients are evenly distributed. Serve at room temperature.
