Wash and core the peppers, removing the seeds. Stuff with cheese of your choice. Mix the egg replacer with the water, or place the soy milk in a small bowl. Mix the salt and bread crumbs in a small bowl. Dip the peppers in egg/soy wash, then roll in bread crumbs to coat. Arrange the peppers on the baking sheet, and bake until the coating turns golden brown (about 5 - 8 minutes). Serve hot with a dipping sauce (fatfree Ranch is traditional (well, the Ranch part is :)) FATFREE DIGEST V96 #164 From the Fatfree Vegetarian recipe list.
