Suggest a better descriptionMix the potatoes, onion, egg substitute or egg whites and seasonings in a bowl. Keep adding bread crumbs until it all adheres in about the consistancy of Play-Doh. Shape into latkes. Make a single layer of latkes on a paper towel and microwave for 4-6 minutes on High. Then spray some cooking spray (Pam, Mazola, whatever) into a skillet, heat until water jumps, and brown the outsides of the latkes.
