These "Fausnachts" (raised potato doughnuts) are traditionally made and eaten on Shrove Tuesday in the PA Dutch region (Reading PA).
Scald the milk. Add sugar, butter, salt and potatoes. Stir and cool to lukewarm. Meanwhile, about 5 min before you're ready for it, add about 1/4 tsp sugar, 1/4 tsp salt and all the yeast to potatoe water cooled down to about 100 degrees. When the yeast starts to bubble and is ready, add the milk and potato mixture and the well beaten eggs. Flavor with lemon, cinnamon and nutmeg. Add bread flour to mixture, finishing mixing by hand. Transfter mixed dough to 2 greased pans, cover and let rise in a warm place untilit it holds the impression of your finger when you touch it lightly. Then punch down to release air bubbles. Turn out on lightly floured board and roll out to ? to ? inch. Cut with bread knife and place on floured sheets to rise again until they double.
Fry in 1 gal hot liquid Crisco oil at 375? until golden, turning gently with a fork or spoon with holes once. Drain on paper toweling.
Enjoy with powdered sugar, jelly, Turkey syrup or even plain.
You can even glaze some:
Mix 1/8 cup of water with ? confectioners sugar with ? tsp vanilla. Dip 1 side in glaze and drain on a rack. This should glaze about 2 doz.
