This is my most often-requested brisket recipe. Best made ahead, it is a crowd pleaser.
Preheat oven to 300 degrees.
Place brisket in roasting pan. Pour beer over. Spread onions and garlic over brisket. Sprinkle with salt if not using kosher brisket, and pepper, if desired. Cover the pan and roast for 2 hours. Remove from oven and increase temp to 325. Uncover brisket and pour full bottle of BBQ sauce over the brisket. Roast 1 hour uncovered. Let cool before slicing.
This is best prepared the day before and sliced cold, against the grain.
