Can make and freeze.
Beat sugar and butter until well mixed. Add egg and mix well.
Combine flour with baking powder and salt. Stir in the milk and the flour mixture into the sugar mixture. Add vanilla.
Grease bottom only of 8 x 8 baking pan with shortening. Spread batter in pan.
Combine brown sugar, flour, cinnamon and melted butter and sprinkle over top of batter. Bake 25 - 35 minutes at 375 degrees.
