Bring large pot of water to a boil. Add green beans and boil rapidly for 3 minutes. Drain and place in a bowl of ice water to chill. (This will leave your beans slightly crunchy and very flavorful.)
Heat oil in large skillet. Add sunflower seeds, paprika, and cumin, and saute for 1 minute. Add corn and beans, and saute for 3-4 minutes. Remove from heat and stir in diced tomato. Add cilantro, toss to combine, and serve.
