Preheat oven to 425 degrees. Brush cups in two 12-cup mini muffin pans with oil and put into the oven to heat. Stir milk and melted butter into the eggs. Sift flour into the egg mixture and whisk together to make a smooth batter. Stir in chives, parsley, salt, and pepper. Fill each muffin cup with batter. Put a cube of feta cheese in the center of each one and bake 20-25 minutes or until puffed and golden.
Meanwhile, make mango sauce. Put mango pulp in a food processor and process to a smooth puree. Place it into a bowl and stir in the yogurt. Arrange popovers on serving plates. Serve with mango sauce and garnish with parsley and chives.
