I large frying pan heat olive oil and sauté the zucchini until they are golden. Remove the zucchini and place on paper towel. Add a little more olive oil and sauté the onion until caramelized. Remove from the pan and set aside.
Place tomatoes in the pan and sauté with the parsley and garlic for a few minutes then add onions and toss.
Prepare fettuccini as directed on box.
Drizzle a little olive oil on a serving plate and place the fettucini. Top with the tomatoes, onions and garnish with the grated cheese and zucchini.
