Suggest a better description1. Place chicken between two pieces of parchment paper and pound thin.
2. Combine the seasonings, oil, and lime juice in a large ziplock bag. Add thawed chicken to the bag. Massage until well coated. Marinate for 2 or more hours in refrigerator.
3. Double layer foil making a rim by folding. Spray with cooking spray. Add pineapple, peppers, onions and jalapeño.
4. Place chicken, pineapple and veggies on grill. Cook chicken 5 minutes per side or until cooked through and tender. Slice chicken into thin strips. Once veggies are tender, remove from the grill. Finely chop pineapple and veggies and place in a bowl. Add cilantro, lime juice, ginger, cumin, oil, salt & pepper to taste.
5. Divide chicken between tortillas. Top with butter lettuce, salsa and cashew sour cream.
