Peel & chop cucumbers.
Drain & Rinse beans.
Spread beans on half of quesadilla and mash.
Top with pepper and cucumbers.
Sprinkle with cheese.
Cook:
Cook on medium heat for 2-3 minutes or until bottom of tortilla is crisp and light brown. Fold plain side of tortilla over veggie side. Take out of pan and cover with foil to keep warm if necessary.
Serve with Ranch and zesty Sauce.
