Suggest a better descriptionIn a small bowl, whisk rub ingredients together and rub evenly over chicken breasts. Allow to sit 30 minutes, at room temperature, or refrigerate up to 8 hours, then bring to room temperature before cooking.
Add all crema ingredients to blender and chop, then blend until smooth. Add additional Ranch mix, chipotle pepper, and salt & pepper to taste. Add milk, a tablespoon at a time, for a thinner consistency. Chill in refrigerator.
Cook chicken:
Stovetop: Into a very hot skillet, add chicken and cook undisturbed for 3-5 minutes, until browned, or blackened,. Turn over, cover pan, and reduce heat to medium. Cook for 5-7 more minutes or until chicken is cooked through. Remove to cutting board and let rest 5 minutes before slicing or dicing.
Grill: Grease and pre-heat grill to 375-450 degrees. Grill chicken undisturbed for 5-7 minutes per side, or until cooked through (165 degrees). Remove from grill and let rest for 5 minutes before slicing.
Serve over rice.
