Suggest a better descriptionDe-stem and clean figs. Place in a large bowl or pot. Sprinkle figs with baking soda, then pour boiling water over figs and let stand for 10 to 15 minutes. Rinse and drain.
Place figs in a large pot and mash them with a potato masher. Add sugar and water and cook over low to medium heat until mixture reaches jam consistency.
To check for jam consistency, drop a bit of cooking jam onto a cold plate and let it cool for a minute or two. Tilt plate a bit to help determine if mixture is too thin, in which case it needs more cooking. If it's too thick, add just a bit more water. Jam will thicken a little when refrigerated.
Store, refrigerated, in sterilized jars.
