This is a simple but classic version of fig pudding. The recipe is made purely of figs with no other dried fruit.
To make the pudding
Chop 1 pound dried Smyrna figs, stemmed. Rinse a heavy saucepan in cold water and in it combine the figs and 1 3/4 cups milk. Bring the milk just to the boiling point over very low heat, simmer the mixture, stirring, for 20 minutes, and let it cool. Into a bowl sift together 1 1/2 cups flour, 2 1/2 teaspoons double-acting baking powder, 1 teaspoon each of freshly grated nutmeg and cinnamon, and 3/4 teaspoon salt. In a large bowl cream Together 3/4 pound suet, ground, and 1 cup sugar until the mixture is fluffy, add 3 eggs,1 at a time, beating well after each addition, and stir in 1 1/2 cups fresh bread crumbs and 3 tablespoons grated orange rind. Add the flour mixture alternately with the fig mixture, beating well after each addition. Pour the mixture into a well-buttered 2-quart decorative pudding mold fitted with a lid, put the mold in a heavy kettle, and add enough hot water to the kettle to reach halfway up the sides of the mold. Steam the pudding, covered with both lids, over moderately low heat for 2 hours. Remove the mold from the kettle and let the pudding cool in the mold, covered, for 20 minutes. Remove the lid, invert a serving plate over the mold, and invert the pudding onto the plate. Serve the pudding warm with rum butter.
To make the rum butter
In a warm bowl cream together 2 sticks (1 cup) butter, softened, and 1 cup Demerara sugar (available at specialty foods shops). Beat in 1/4 cup dark rum, 1 tablespoon at a time, 2 tablespoons grated orange rind, and freshly grated nutmeg to taste and beat the mixture until it is light and fluffy. Transfer the rum butter to a small serving bowl. Makes about 2 cups.
