Method
Filet mignon
Vacuum seal the filet, seasoned with Maldon salt, Szechuan pepper and the 3 tablespoons of whiskey.
Cook in a bain-marie or steam oven at 6 5 0C/149aF for 15 minutes (50?C/122F center temperature).
Mixed grill
Char-grill the vegetables.
Pine nut oil
Halve the pine nuts and brown them in the olive oil; allow to cool. Add the beef jus and finely chopped chervil.
Finish
Once the filet is cooked, remove it from the bag and lightly brown the outside on a charcoal grill. Cut into slices.
Assembly
Arrange a bed of vegetables in the center of the plate, with a few slices of filet mignon on top.
Drizzle the ensemble with pine nut oil. Finally, dust with Maldon salt and Java pepper.

Our idea with this recipe is to offer an alternative to a traditional whiskey filet by replacing the sauce with the whiskey flavor imparted by cooking it sous-vide.
We use 16 year Lagavulin whiskey for its mild smoky flavor, which combines perfectly with the grilled vegetables. This way, we establish an interesting play between the smoky whiskey flavor, the char-grilled vegetables and the toasted flavor of the pine nuts.
