All time Filipino breakfast favorite!
Pour water in a large mixing bowl and sprinkle yeast. Let stand for 20 minutes.
Sift bread flour, all purpose flour, salt and sugar in a bowl. Mix well and make a well in the middle.
In a separate bowl, oil/butter and yeast mixture.
Pour over dry ingredients and mix well until everything is well blended.
Lightly dust a flat surface and put dough on surface. Dust with flour, stretch and fold.
Continue to dust and fold until dough comes together. Don't add too much flour as this will result in a hard bread.
After 5 mins, dough should be smooth. Continue kneading for another 5 mins until its elastic.
Pinch test: if you pinch dough and it feels like your earlobe, its time to stop!
Lightly grease a bowl and the surface of the dough. Cover with a plastic wrap and let it rise in a dark place, away from direct light for an hour (you can use the oven for this). This should double in size by then.
Punch the dough to let the air out then leave it for another hour which should triple its size to make softer bread.
Roll the dough into a log and cut into 4 equal pieces.
Roll each piece into a log and cut into 6 equal pieces, or 5 for bigger breads.
Roll each piece in bread crumbs and arrange in a lightly floured baking tray, at least 1 inch apart.
Cover with a damp cloth and let rise for 30 to 45 minutes.
10 minutes before the dough finishes rising, preheat the oven at 325F or 190C.
Bake for 25-30 mins or until brown outside.
Bread should be crusty outside and soft inside. Serve warm.
If you don't have bread flour, you can substitute this with regular all purpose flour but it may require slightly more liquids so ease up on the dusting :)
