Separately, combine flour and salt, make a well, and add 1 1/2 cups of the egg mixture. Beat until smooth. Slowly whisk in remaining mixture to create a thin batter. Let stand at least 30 min. Put 1 tsp. butter or oil into each well of a 24 x 1/2 cup muffin tin. Heat in a 400 degreesF. oven for 2 min. Fill each 3/4 full with batter and cook for 18 to 20 min., or until golden and puffed. Fill with 1/2 cup desired filling. Suggested fillings: Ratatouille, cheddar cheese and broccoli, creamed chicken, beef stew or stroganoff, ham and Swiss.
