No more hard, dry, burned plantain. Finally, got the perfect recipe from my veggie vendor
Preheat Oven, 450(F) degrees for 10-15 minutes.
1. Grease a small pan (8'x8') with butter. Excess butter, just spread it on the bottom.
2. Slice the plantain in 2 and put in pan over butter
3. Sprinkle with brown sugar.
Bake the plantain. 15 minutes on 1 side and about 10 minutes on the other one. Once in a while, just check it. When is caramelized and look right, is done.
Remove from pan with a large spatula. Be careful as is very soft and sticks on your fingers. :)
Soft, sweet and perfect to use as a side dish.
for this dish to be good, the plantain need to be very well ripe. Just yellow looking is not enough. Need to have some dark spots on it, than is good.
If you can't buy it like this from grocery, just keep it at the room temperature for 1-3 days until look ready.
