This is typical of the western provinces of Finland. The finished pancake is custard-like, with a rich taste, and a Great Presentation profile. But serve quickly, out of the oven, as it falls as it cools.
Top with fruit of the season
Makes 4 (large) or 6 servings.
Preheat a cast-iron frying pan (bout 10 inches wide by 3" deep) in a 424 degree (400 degrees in a convection oven) for about 10 minutes.
Meanwhile, in a bowl, beat together the eggs, honey, salt and milk. Add the flour; beat until blended and smooth.
Remove pan from oven, melt butter in pan, and then add batter, pouring into the center of the pan, so that the butter is spread to the sides.
Return pan to oven, and bake about 25 minutes, or until a knife inserted into the center of the pancake comes out clean.
SERVE IMMEDIATELY.
