Spray all work surfaces down with frontier before and during your preparation. You will need to change the yield/servings as this recipe is for 5 people
- Get the amount of fish that you need out of the freezer and place into the fridge
- Remove bread from freezer
- Prepare dessert eg count bowls
- 2 and half hours before serving prepare salad vegetables and serve in melanine bowls
- Make sure jugs of water, sauces, mayonnaise, vinegar, lemon juice, tartare sauce and salad dressings are filled and placed onto trolley
- Put bread onto trays and cover.
- 90 minutes before serving turn on the deep fryer
- 75 minutes before serving turn on oven to 200c plate up fish onto trays with baking paper
- 60 minutes before serving start frying chips for first time using stainless bowl (larger ones)
- Put fish into the oven
- 15 minutes to serving check fish and make sure its cooked above 70 if not turn it up if so turn down the oven
- Put salads, bread, butter/margarine, salad dressings, salt and pepper, cutlery tray and water jugs in dining room
- Cook chips for 2nd time for about 1 minute 5 minutes before serving. Place into large metal tray and salt with chicken salt
- Serve fish and chips
