Suggest a better descriptionSource James Beard "How to eat better for less book" 1954 submitted by marina phx. az. saute onion and garlic in the butter just till soft. Add the green pepper, and tomato, parsley salt and pepper. Mix well. Purchase 4-6 lb. fish of choice. Wash the fish well, then stuff it with stuffing above. Fasten the fish with small skewers on toothpicks. line a baking pan with heavy foil,allowing it to overlap at the ends. This will help you lift the foil out when done. Brush fish with melted butter. Lay the fish on foil, rub it civer with strips of bacon. Bake at 450 F allowing ten minutes per inch of measured thickness. Baste with melted butter. test with fork for doneness.
