Suggest a better descriptionCombine the flour, cayenne, and salt in a medium bowl, and season with black pepper. If the snapper fillets are large, cut them into 4-inch sections. Dredge the fillets in the flour mixture.
Melt 2 tablespoons of the butter in a heavy skillet over medium heat. Add the garlic, and sauté for 30 seconds. Add several snapper fillets, and sauté for 3 to 4 minutes, or until they begin to turn opaque. Turn the fillets, and cook for 3 to 4 minutes more, until the fish flakes with a fork. Transfer the fillets to a serving platter, and keep them warm. Cook the remaining fillets, adding more butter as necessary.
When the fillets are done, increase the heat to high, add the lime juice, and swirl the pan to deglaze it. If there is any remaining butter, swirl it in the pan until it melts. Pour the pan juices over the snapper.
Heat the tortillas on a hot griddle until they are very soft, then wrap them in a towel. Place the cilantro and onion in small serving bowls. Add the lime wedges to the platter of snapper, and place everything on the table. Guests assemble their own tacos by topping two corn tortillas with a piece of snapper, squeezing lime juice over it, and topping all with cilantro, onion, and salsa.
