haddock with tortillas, greek yogurt, salsa
Preheat oven to 400.Make salsa by combining first 8 ingredients down to the lime juice. In med sized bowl, combine tomato, onion, fruit, avocado, pepper and cilantro. Add lime zest, lime juice and salt. Stir to combine. In sm bowl, combine cayenne, chili powder, oregano, paprika and salt. Arrange haddock fillets on foil lined baking sheet. Brush each fillet with olive oil. Sprinkle spice mix over fish. Bake for 7-8 min or til fish flakes easily with fork.
To serve, top each warm corn tortilla with fish, salsa, yogurt and cilantro.
