Sauté onions bell pepper together and set aside to keep warm
Sauté mushrooms and add to set aside onion mix
Add any other vegetable set aside to add to onion mix
Sauté fish in in cleaned pan, add oil if needed, until done
Remove when done and set aside to keep warm
Add wine and preserves to uncleared pan, stirring constantly to blend. Add additional wine if needed to make small amount of sauce
