Blend everything in the blender, except cranberries, pecans, coconut (add at the end after blending)
Put in in a bundt cake pan. Use Pam spray to coat or coconut oil and oat bran, if you don't have a non-stick pan.
Bake it at 350º for 40 mins or until an inserted toothpick comes out clean.
Suggestion: add pecans, coconut, and a bit of sugar if it's not sweet enough.
If you double the recipe, bake for 1 hr and keep testing, inserting a knife to see if it comes out clean and adding 20 mns of baking time as needed.
