The chicken is tender and spicy but not hot, and the marinade has an exotic flavor for the simple dish.
Preheat oven to 350 degrees. Rub the chicken thoroughly with the ginger. Mince the ginger and add it to the remaining ingredients to make a marinade. Add chicken to marinade and chill, 1 hour, turning over once. Add chicken with marinade to a 9" square baking pa, and bake, covered, for 1 hour, basting frequently. Turn chicken once or twice. Add water as needed to sauce if it becomes too thick. Serve chicken over shredded lettuce, with rose rice and additional sauce.
Serve with plenty of rose rice to soak up the extra sauce.
