Melt butter in saucepan.
Add onions and sauté 5 minutes.
Add beef, salt and pepper, coriander, and thyme. Cook for 5-8 minutes.
Cover beef with beer, stock, and mustard. Let simmer for 2.5-3 hours.
If needed, add more beer, stock and butter.
The more slowly this is cooked, the mor tender the meat will be.
