Drain cherries. Combine syrup with sugar. Combine cornstarch and cold water. Add syrup and cook until thickened and clear. Add cherries and peel. Heat thoroughly but do not cook the cherries. Pour into chaffing dish and keep warm. Warm the brandy carefully over low heat. Pour over cherries and ignite. When flames flicker stir gently. Ladle over ice cream. Serves 8.
