In a smallish bowl, combine all the rub ingredients and stir to mix thoroughly.
Apply the rub to both sides of the meat pieces with food prep gloves
Grill two pieces at once using the closed grill method, and if necessary grill a third piece after the first two are done. Cook to Internal meat temperature of 140 degrees (about 4-6 minutes), let sit 5 minutes until meat reaches 145 degrees.
