Soak about 8 wooden skewers in water until saturated. Preheat grill to high.
Butterfly the flank steak (start with meat grain running up & down in front of you, and holding a knife horizontally to work surface, slice steak through the middle from right to left, until reaching about 1 inch from completely cutting through). Lay open the flank steak & pound it to an even thickness.
Spread steak so that the grain is running left to right. Layer it with salt & pepper, Asiago cheese, spinach, Gorgonzola cheese, and then the whole green onions. Begin rolling up the steak tightly and away from you. Evenly insert the skewers about 1 inch apart along the seam of the roll to hold it together. Cut between each skewer (but not against the skewers - you want the same amount of meat on either side of each skewer).
Grill the pinwheels on each side for about 3-4 minutes or until desired doneness.
