1) Lay cucumber slices in the bottom of a pitcher and cover with a layer of ice (to keep them below the surface of the water).
2) Allow the cucumber to steep in the water for at least an hour (or overnight) before serving.
3) Stir gently and pour water into pitcher. Serve cold.
Refills: simply leave the slices of cucumber in the pitcher when serving and refill the pitcher.
STORE in refrigerator for two days.
