fried rice flexitarian from good housekeeping
in large skillet, heat 2 t vegetable oil over medium heat. add tofu and cook. turning occasionally until lighly browned about 3 min. remove and put in bowl.
if using eggs, heat 1 t of oil in skillet and pour in eggs cook. stir until softly scrambled add eggs to tofu
in skillet heat remaining 1 t of vegetable oil over med. heat. add ginger and garlic and stir frey 1 min. add asparagus, broccoli, carrot, and mushrooms, stir fry for 3 mins. add water and increase heat to med-high. stir fry until water evaporates and vegetables are tender. add rice, peas, and soy sauce; stir-fry until ric e is hot, about 3 minutes; stir in green onions and sesame oil.
stir in tofu and eggs....sprinkle with cilantro.
