MEATLOAF:In a large bowl, combine the ground meat, egg, prosciutto or mortadella, 1/4 cup of bread crumbs, Grana and all but 1 teaspoon of the chopped parsley.
Season with freshly grated nutmeg, salt and pepper. Mix well, form the mixture into a large oval, and sprinkle it with the remaining bread crumbs.
In a large skillet, melt the butter with the olive oil over medium heat. Add the meatloaf, and saute until browned on sides.
Remove the meatloaf from the skillet, and add the onion, carrot, celery and the remaining teaspoon of parsley. Saute for 3 minutes, and sprinkle with the flour. Stir well, and add 3/4 cup of water.
Return the meatloaf to the skillet, cover and lower the heat to medium-low. Cook for 10 to 12 minutes, or until cooked through. Sprinkle with the lemon juice just before serving.
