Line bottom of loaf pan(s )with parchment paper. You can make one big loaf or two small loafs. I think the small ones cook better. Sift together, flour,baking soda,cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 min. Drizzle in oil. Add bananas,sour cream and vanilla. Fold in dry ingredients and nuts. Pour into pan(s) and bake for 45 min to 1 hr. If you use two pans start checking it at 30 mins.
