These tortillas have a great taste, plus they are fluffy and chewy.
Whisk together the flour, baking powder, and salt in a med bowl, add shortening and mix with fingers until it resembles bread crumbs.
Add hot water and work into dough until completely combined.
Turn dough out onto floured surface and kneed until smooth about 1 min. cover with damp cloth or plastic and let rest for 10 min.
Divide dough into 6 equal pieces and cover dough balls with a damp cloth and let rest for an additional 15 min.
Preheat cast iron griddle.
Place dough ball on a floured surface and roll out into a round disc turning and flipping as you go.
Place tortilla on the hot griddle for about 30 seconds or until bubbles form, flip and cook until browned, flip one more time and remove when an air pocket forms or browned.
Place cooked tortillas in a tortilla warmer or in between a towel.
Serve immediately.
I like to use High-Ratio shortening, which makes them even more tender :)
You can also use lard, bacon fat, or butter in place of the shortening.
