Make a well in the center and add the milk, butter, vanilla and egg. Whisk these ingredients in the middle with whisk.
Fold slowly into the dry ingredients until smooth (there may be a few lumps but that's ok).
Set batter aside and let rest while heating up pan or griddle.
Heat a nonstick lightly -greased pan or griddle over medium-low heat. Pour 1/4 cup batter onto the pan and spread out into a round shape with the back of your ladle. When the underside is golden and bubbles begin to appear on the edges, flip with a spatula and cook until golden.
