Whisk Flour, Baking Powder, Sugar and Salt
Combine Ricotta, Milk, Egg Yolks, and Vanilla in a separate mixing bowl
Add the dry ingredients to the Milk and Cheese mixture
Beat the Egg Whites and fold them into batter
Melt Butter on griddle over medium heat
Use 1/3 cup of batter per pancake and cook for 3-4 minutes, then flip and cook for 2-3 minutes
